Home-made fresh firm tofu (soybean curd). Vegetarian protein food which tends to take up the flavour of marinades or sauces it is cooked in easily, hence excellent for stir-fries. Also used in vegan creamy desserts, baking, and as a lovely and healthy cold snack when fried crispy in sesame oil and seeds, added to salads.
